Italian Cuisine and Culture Courses

You asked for it!  Here it is!!  Since October 1998 Centro Internazionale Dante Alighieri has been offering a new  Italian Cuisine and Culture Program that is sure to become a hit with the casual and the serious Italian Cuisine enthusiast.

The courses, based on traditional Italian Cuisine, will allow you to:

  • discover how to prepare dishes from centuries old recipes

  • explore more recent methods and forms of Italian Cuisine

  • recognize and select the best oils and herbs to complement the dishes you prepare

  • select and choose Italian wines to accompany your dishes

  • experience the local Cuisine of Tuscany

The courses are taught in Italian and require a basic knowledge of spoken Italian as well as some specific vocabulary.  Those students who do not posses a sufficient knowledge of the language must attend an Italian language course prior to enrolling in the cooking program. The program is run by Mr. Mario Neri, President of the Sienese Association of Chefs, and by Ms. Serena Massari and a group of selected professional chefs and sommeliers. The courses will take place in a beautiful newly furnished kitchen at the school.  All participants in the Italian Cuisine and Culture Courses can also take part of the regular social activities organized by the Centro Internazionale during the afternoons and evenings.

Course options 2008

The 2008 programs are divided into Amateur Courses  (with duration of 1, 2, 3 or 4 weeks) designed for non-professionals and professionals looking for a less intensive option, and Professional Courses (24 Session courses that also require Italian language training) designed for professionals and non-professionals who are interested in a more in-depth cooking course.  Students completing the 4 weeks Amateur and any Professional course qualify for work experience internships at a local restaurant. 


Courses for Amateurs -(see specific description and prices below): These 1, 2  or 3 week  long courses consist of either 5, 8 or 12 sessions respectively, and offer a general overview of Italian Cuisine as a whole, specific regional cuisine and specially Tuscany.  Each session lasts about four hours and concludes with a lunch consisting of the dishes you have prepared. These courses are designed for non-professionals who wish to take an intensive practical course in a relaxed atmosphere while staying in the beautiful city of Siena. You will learn how to prepare a host of versatile Italian dishes with confidence and will gain a greater understanding of how to select and use basic Italian ingredients such as olive oil and spices - skills which you will be able to use at home to impress friends and family alike! During each course students are given a copy of all the recipes they prepare for future reference.  A minimum level of Italian knowledge is required for some of the courses, see table below for requirements for each course (Level 1 courses are appropriate for beginners, Level 2 requires some knowledge of Italian, Level 3 requires intermediate knowledge of Italian).   Click here for a sample of the Amateur Cuisine Courses.

Courses for Professionals  2008:

OPTION A:  Short Term Professional Culinary courses:

This program develops the participant's attitudes to their optimum potential and gives them a professional approach to Tuscan cuisine . The courses foresee culinary sessions at professional level for different food areas. Emphasis is put not only on the preparation of a wide variety of versatile dishes, but also on the study and use of essential extras such as wine, spices and olive oil. A fascinating program of educational visits to places of interest such as a vineyard, wine cellar, a butcher’s and wholesalers is included in the course, as is the participation in the social activities organized by the Language school for your free time. This program is aimed for food professionals that would like to discover the secrets of Tuscan cuisine.

OPTION B: Culinary Training

These programs are designed for those who wish to be actively introduced in the world of Italian cooking at a professional level. Each program is composed of learning Italian language and culture in group lessons (the length of stay varies according to the starting level of knowledge of Italian language) and receiving a professional teaching of cooking in view of internship in a restaurant, hotel, and trattoria. The Participant will attend a required number of lessons of Italian language according to his/her initial knowledge of Italian. The school will evaluate the level of knowledge of Italian language on the basis of a on-line test that the participant must  send together with the enrolment form. The Participant will be informed about the result of the test before his/her departure. On his/her first day at the school, the Participant will have to take an oral test. The participant will attend 40 cooking sessions on the basis of different level difficulty followed by 12 weeks of training in a restaurant of Siena or surrounding. These sessions will take place mainly in the morning or in the evening according to the level. After completion of this courses, Participants may continue their experience with a 12 weeks of non paid internship. The Participant must sign up for an internship program (12 weeks) at the time of the enrolment specifying its length otherwise he/she will not be accepted into internship program. At the end of the program the Participant will get the certificates of attendance for the language and the cooking courses, and a certificate of attendance for training course together with a reference letter: the first step to enter in this fascinating and passionate world

Accommodation Prices 2008:

Please note accommodation charges are to be paid upon arrival in local currency (Euros) within 3 days of arrival. IMPORTANT NOTE: Students requesting accommodations must ADD a USD 114 accommodation fee to the course prices listed below, this fee is payable prior to arrival and will be included in your invoice. Prices detailed below have been converted to USD using an average exchange rate to be used for budgeting purposes. Actual amount to be paid will be detailed in final invoices.
